Slow cooker chicken breasts

Here are easy, juicy slow-cooker chicken breasts that don’t dry out — plus a few flavour options 🍗

Basic Slow Cooker Chicken Breasts

Time: 3–4 hrs on LOW (best) or 2 hrs on HIGH
Serves: 3–4

Ingredients

  • 4 boneless, skinless chicken breasts
  • ¾ cup chicken stock or broth
  • 1 tbsp olive oil or butter
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Lightly grease the slow cooker.
  2. Place chicken breasts in a single layer.
  3. Season with salt and pepper, drizzle with oil.
  4. Pour stock around (not over) the chicken.
  5. Cover and cook LOW 3–4 hours or until just cooked (internal temp 74°C / 165°F).
  6. Rest 5 minutes before slicing or shredding.

Flavour Variations (Add at Start)

🍋 Lemon Garlic

  • 3 cloves garlic, sliced
  • Zest + juice of 1 lemon
  • 1 tsp dried oregano

🌿 Creamy Mushroom

  • 1 cup sliced mushrooms
  • ½ cup cream or crème fraîche (stir in at the end)
  • 1 tsp thyme

🌶 BBQ Shredded Chicken

  • Replace stock with ¾ cup BBQ sauce
  • Shred and cook 15 more minutes

🧄 Italian Herb

  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • 1 tbsp tomato paste

How to Keep Chicken Moist (Important!)

  • Cook on LOW, not high if possible
  • Don’t overfill or stack chicken
  • Remove as soon as it’s cooked
  • Add creamy ingredients at the end

Serving Ideas

  • Slice for salads or wraps
  • Shred for tacos, sandwiches, or pasta
  • Serve with mash, rice, or veggies
