Ingredients (Serves 4)

For the Salad:

  • 1 head of romaine or mixed greens, washed and chopped
  • 1 can (11 oz) mandarin orange segments, drained
  • ½ cup sliced almonds, toasted
  • ½ cup red onion, thinly sliced (optional)
  • ½ cup shredded carrots (optional)
  • ½ cup dried cranberries or raisins (optional)
  • ½ cup crumbled feta or goat cheese (optional)

For the Dressing:

  • 3 tbsp olive oil
  • 2 tbsp white wine vinegar or rice vinegar
  • 1–2 tsp honey or maple syrup
  • Salt and pepper, to taste
  • Optional: ½ tsp Dijon mustard for tang

Instructions

  1. Prepare the Salad
    • In a large bowl, combine greens, mandarin orange segments, toasted almonds, and any optional veggies or toppings.
  2. Make the Dressing
    • In a small bowl, whisk together olive oil, vinegar, honey, salt, pepper, and Dijon if using.
  3. Toss and Serve
    • Drizzle dressing over salad just before serving.
    • Toss gently to coat everything evenly.
    • Top with cheese or extra almonds if desired.
