Ingredients

  • 4 medium potatoes, diced (Yukon gold or red potatoes work well)
  • 1 large onion, sliced
  • 2–3 tbsp olive oil or butter
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder (optional)
  • 1 tsp paprika or smoked paprika (optional)
  • Fresh herbs like rosemary, thyme, or parsley (optional)

Instructions

  1. Prep the Veggies
    • Wash and dice potatoes into ½-inch cubes.
    • Slice onions into thin strips.
  2. Cook
    Option 1 – Skillet (Crispy & Caramelized):

    • Heat oil or butter in a large skillet over medium heat.
    • Add potatoes and season with salt, pepper, and optional spices.
    • Cook 15–20 minutes, stirring occasionally, until potatoes start to soften.
    • Add onions and cook another 10 minutes until potatoes are golden brown and onions are caramelized.

    Option 2 – Oven Roasted:

    • Preheat oven to 425°F (220°C).
    • Toss potatoes and onions with oil, salt, pepper, and spices.
    • Spread on a baking sheet in a single layer.
    • Roast 25–35 minutes, stirring halfway, until potatoes are tender and golden.
  3. Serve
    • Sprinkle with fresh herbs if desired.
    • Serve as a side with eggs, meat, or fish.
