πŸ›πŸŒΏ Kathal ki Sabji (Jackfruit Curry)

Kathal ki sabji is a popular North Indian vegetarian dish made from raw jackfruit. It has a meaty texture and soaks up spices beautifully, making it a favorite β€œveg meat” style curry.


πŸ§‚ Ingredients (3–4 servings)

🌿 Main

  • 500g raw jackfruit (kathal), peeled & cut into chunks
  • 2–3 tbsp oil (mustard oil preferred)
  • 1 tsp cumin seeds
  • 1 bay leaf

  • 2 onions (finely chopped or blended)
  • 2 tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 2–3 green chilies (optional)

  • 1 tsp turmeric
  • 1–1Β½ tsp red chili powder
  • 1 tsp coriander powder
  • Β½ tsp garam masala
  • Salt to taste

  • 1–1Β½ cups water
  • Fresh coriander for garnish

🍳 Instructions

1. Prep jackfruit (important step)

  • Grease hands and knife with oil (prevents stickiness)
  • Boil jackfruit pieces for 8–10 minutes or pressure cook 1 whistle
  • Drain and set aside

2. Fry jackfruit

  • Heat oil in a pan
  • Lightly fry boiled jackfruit until golden edges appear
  • Remove and keep aside

3. Make masala

  • In same pan, add cumin seeds + bay leaf
  • Add onions and sautΓ© until golden
  • Add ginger-garlic paste and cook until raw smell disappears
  • Add tomato puree and cook until oil separates

4. Add spices

Mix in:

  • turmeric
  • chili powder
  • coriander powder
  • salt

Cook for 2–3 minutes.


5. Combine & simmer

  • Add fried jackfruit
  • Pour water
  • Cover and cook 10–15 minutes on low heat

6. Finish

  • Add garam masala
  • Simmer 2 more minutes
  • Garnish with fresh coriander
