  • Ginger-garlic paste – 1 tbsp each
  • Green chilies – 2–4 (crushed)

  • Fresh coriander – 2 tbsp
  • Salt – to taste
  • Red chili powder – 1 tsp
  • Garam masala – Β½ tsp
  • Cumin powder – 1 tsp
  • Corn flour or roasted gram flour – 2 tbsp (for binding)

  1. Mix all ingredients thoroughly (best done by hand).
  2. Let mixture rest 20–30 minutes in fridge.
  3. Shape into flat kababs or skewers.
  4. Shallow fry or grill on medium heat.

  • Minced meat – 500 g

  • Salt – to taste
  • Chili powder – 1 tsp
  • Garam masala – Β½ tsp
  • Egg or gram flour – 1 tbsp (binding)

  • Oil – 3–4 tbsp
  • Onions – 2 medium, sliced
  • Tomatoes – 2–3 blended
  • Ginger-garlic paste – 1 tbsp
  • Yogurt – Β½ cup (optional)
  • Spices: turmeric, chili, coriander powder
  • Water – 2–3 cups

1. Make koftas

  • Mix all kofta ingredients
  • Shape into small balls
  • Set aside

2. Prepare gravy

  • Fry onions until golden
  • Add ginger-garlic paste
  • Add tomato puree + spices
  • Cook until oil separates

3. Cook koftas

  • Add water to gravy
  • Gently place koftas inside (don’t stir hard)
  • Cover and simmer 20–25 minutes

4. Finish

  • Add yogurt (optional)
  • Simmer 5 more minutes
  • Garnish with coriander
