  • Mutton (goat meat) – 1 kg (bone-in preferred)

  • Ginger paste – 1.5 tbsp
  • Green chilies – 4–6

  • Black pepper – 8–10
  • Green cardamom – 6

1. Fry the onions

  • Heat oil/ghee

2. Cook the mutton

  • In same pot, add whole spices

  • Cook until meat changes color
  • Add yogurt and cook until oil separates

3. Make the broth

  • Add 4–5 cups water

4. Add rice

  • Adjust salt and water (rice should be just covered)

5. Dum (final steaming)

  • Cook on medium until water reduces
  • Lower heat, cover tightly
  • Steam for 10–15 minutes

6. Finish

  • Fluff gently
  • Top with fried onions and green chilies
