Chicken and dumplings is a hearty, creamy stew with tender chicken and soft, biscuit-like dumplings simmered right in the pot. Itโ€™s warm, filling, and very comforting.

๐Ÿ” For the chicken stew

  • 500gโ€“700g chicken (breast or thighs)
  • 1 onion (chopped)
  • 2 carrots (sliced)
  • 2 celery stalks (optional)
  • 2โ€“3 garlic cloves (optional)
  • 4 cups chicken broth or water
  • 1 tbsp oil or butter
  • Salt & black pepper
  • 1/2 tsp thyme or mixed herbs

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp butter (melted)
  • 1/2 cup milk

๐Ÿณ Instructions

1. Make the stew

  1. Heat oil/butter in a pot
  2. Sautรฉ onion, carrots, celery, garlic until soft
  3. Add chicken and cook until lightly browned
  4. Pour in broth, salt, pepper, and herbs
  5. Simmer 15โ€“20 minutes until chicken is cooked
  6. Shred chicken (optional, or leave in pieces)

2. Make the dumplings

  1. Mix flour, baking powder, and salt
  2. Add melted butter and milk
  3. Stir until a thick dough forms (donโ€™t overmix)

3. Cook dumplings

  1. Drop spoonfuls of dough into simmering stew
  2. Cover pot and cook 12โ€“15 minutes
  3. Dumplings will puff up and cook through

  • Keep the lid closed while dumplings cook (they need steam)
  • Donโ€™t stir after adding dumplings or they may break
  • For creamier soup, add a splash of milk or cream at the end
