Sweet potato rocambole with minced meat

Posted on April 1, 2026 by Admin

Here’s a detailed recipe for Sweet Potato Rocambole with Minced Meat—a hearty, savory roulade where sweet potato forms a soft outer layer rolled around a flavorful minced meat filling.

Ingredients (Serves 4)

For the Sweet Potato Layer

  • 2 large sweet potatoes (about 500–600 g), peeled and cut into chunks
  • 1–2 tbsp olive oil
  • Salt and pepper, to taste

For the Minced Meat Filling

  • 300–400 g minced meat (beef, lamb, or a mix)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small carrot, finely grated (optional)
  • 1 tsp paprika
  • 1 tsp dried thyme or oregano
  • Salt and pepper, to taste
  • 1–2 tbsp olive oil for sautéing

Optional Topping

  • 50 g grated cheese (cheddar or mozzarella)
  • Fresh herbs for garnish

Instructions

1. Prepare Sweet Potato Layer

  1. Boil or steam sweet potato chunks until soft (15–20 min).
  2. Mash until smooth, adding olive oil, salt, and pepper.
  3. Let it cool slightly so it can be shaped.

2. Prepare Minced Meat Filling

  1. Heat oil in a skillet over medium heat.
  2. Sauté onion and garlic until translucent.
  3. Add minced meat and cook until browned.
  4. Stir in grated carrot, paprika, thyme, salt, and pepper. Cook 2–3 more minutes.
  5. Remove from heat and let cool slightly.

3. Assemble the Rocambole

  1. On a piece of parchment paper or lightly greased foil, spread the mashed sweet potato into a rectangle (~1/2 inch thick).
  2. Evenly spread the cooked minced meat over the sweet potato, leaving a small edge free on one side.
  3. Carefully roll the sweet potato over the filling, using the parchment to help shape a tight roulade.
  4. Place seam-side down on a baking sheet.

4. Bake

  • Preheat oven to 375°F (190°C).
  • Optionally sprinkle grated cheese on top.
  • Bake 20–25 minutes until heated through and lightly golden.

5. Serve

  • Slice into 1–2 inch thick rolls.
  • Garnish with fresh herbs or a drizzle of sauce (like tomato or cream sauce).

Tips

  • Make ahead: You can prepare the sweet potato and filling in advance, then assemble and bake before serving.
  • Flavor variations: Add spinach, mushrooms, or bell peppers to the filling for extra texture and nutrition.
  • Binding: For extra firmness, you can mix 1 egg into the mashed sweet potato before spreading.

If you want, I can also give a shortcut version using sweet potato puree from the store and pre-cooked minced meat, ready in under 30 minutes.

Do you want me to provide that version?
