Sausage and peppers

Here’s a classic Sausage and Peppers recipe—simple, hearty, and full of flavor. Perfect for a weeknight dinner, sandwiches, or even a party platter.


Ingredients (Serves 4)

  • 4 Italian sausages (mild or spicy, your choice)
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 2–3 bell peppers (red, yellow, green), sliced
  • 2 cloves garlic, minced
  • 1 can (400 g / 14 oz) diced tomatoes (optional, for a saucy version)
  • 1 tsp dried oregano or Italian seasoning
  • Salt and black pepper to taste
  • Optional: fresh basil or parsley for garnish
  • Optional: hoagie rolls for sandwiches

Instructions

  1. Cook the sausages:
    In a large skillet, heat 1 tbsp olive oil over medium heat. Brown the sausages on all sides until fully cooked (or about 12–15 minutes). Remove and set aside.
  2. Sauté vegetables:
    In the same skillet, add the remaining olive oil. Sauté onions and bell peppers for 5–7 minutes until slightly softened. Add garlic and cook 1 minute more.
  3. Add seasoning and tomatoes (if using):
    Stir in oregano, salt, and pepper. If you want a saucier version, add diced tomatoes and simmer for 5 minutes.
  4. Combine and simmer:
    Slice the cooked sausages (optional) and return them to the skillet. Simmer everything together for 5–10 minutes, allowing the flavors to meld.
  5. Serve:
    • Serve hot on a plate with crusty bread or over rice/pasta.
    • For sandwiches, serve in toasted hoagie rolls with the peppers and onions. Garnish with fresh basil or parsley if desired.

💡 Tips:

  • Sweet or spicy Italian sausages both work; mix for variety.
  • Roasting the peppers in the oven first adds extra sweetness and depth.
  • Leftovers taste even better the next day, as flavors meld.
