Coconut cake with 7 minute frosting

Posted on March 28, 2026 by Admin

Coconut Cake with 7-Minute Frosting is a light, fluffy dessert classic—soft coconut-flavored cake paired with a sweet, airy meringue frosting that melts in your mouth.

🥥 What it is

  • Coconut cake: Moist, tender cake often made with shredded coconut or coconut milk.
  • 7-minute frosting: A glossy, marshmallow-like meringue made by whipping egg whites, sugar, and a bit of water over gentle heat for about 7 minutes.

This frosting is fluffy, sweet, and perfect for topping cakes without weighing them down.

🍰 Coconut Cake Recipe (Basic)

Ingredients:

Cake

  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 tsp coconut extract (optional but delicious)
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup coconut milk or regular milk
  • 1 cup shredded coconut

7-Minute Frosting

  • 2 egg whites
  • 1 cup sugar
  • ¼ cup water
  • ½ tsp vanilla extract

Steps:

Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. Cream butter + sugar until light and fluffy.
  3. Beat in eggs one at a time, then vanilla and coconut extract.
  4. Combine flour, baking powder, and salt; alternate adding to batter with milk.
  5. Fold in shredded coconut.
  6. Pour into pans and bake 25–30 minutes (or until a toothpick comes out clean). Cool completely.

7-Minute Frosting:

  1. In a heatproof bowl over simmering water, combine sugar, water, and egg whites.
  2. Beat constantly with a hand mixer for about 7–8 minutes until thick, glossy, and fluffy.
  3. Remove from heat, beat in vanilla.
  4. Frost cooled cake, and optionally sprinkle extra shredded coconut on top.

🔥 Tips for Success

  • Don’t frost a warm cake → frosting will melt
  • Use freshly shredded coconut for stronger flavor
  • Frost quickly and serve soon—the 7-minute frosting is best fresh

🍽️ Serving Ideas

  • Slice with tea or coffee for a light dessert
  • Top with toasted coconut for extra texture
  • Layer with coconut cream filling for a richer cake

If you want, I can give a moist, ultra-fluffy version that’s fail-proof or a tropical twist with pineapple to make it extra special.

Do you want me to make that version?
