Pickled beets

Pickled beets are sweet, tangy, and slightly earthy—great as a side, salad topping, or even in sandwiches.


🥗 What they are

Beets that are cooked, sliced, and preserved in a vinegar-based brine—often with sugar and spices. The result is a balance of:

🍳 Simple Homemade Pickled Beets

Ingredients:

  • 4–5 medium beets
  • 1 cup vinegar (white or apple cider)
  • ½ cup water
  • ¼–½ cup sugar (adjust to taste)
  • 1 tsp salt
  • Optional: cloves, cinnamon stick, black peppercorns

Steps:

  1. Boil the beets (30–40 mins) until tender
  2. Let cool, then peel and slice
  3. In a pot, combine vinegar, water, sugar, salt, and spices
  4. Bring to a boil, then simmer a few minutes
  5. Add sliced beets and cook 5 more minutes
  6. Transfer to a clean jar and let cool
  7. Refrigerate for at least 24 hours before eating
