Meatloaf muffins

Meatloaf muffins are a fun, quicker-cooking version of classic meatloaf—baked in a muffin tray so they cook faster and come out perfectly portioned.

🧁 Meatloaf Muffins Recipe

Ingredients:

  • 500g ground meat (beef or chicken)
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • ½ cup breadcrumbs
  • 1 egg
  • 2 tbsp milk
  • 2 tbsp ketchup (plus extra for topping)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika or chili powder
  • Optional: parsley or coriander

Instructions:

  1. Preheat oven to 180°C and grease a muffin tray.
  2. In a bowl, mix all ingredients (don’t overmix).
  3. Divide mixture evenly into muffin cups.
  4. Add a small amount of ketchup on top of each.
  5. Bake for 20–25 minutes until cooked through.

🍽️ Serving Ideas:

  • With mashed potatoes or fries
  • Alongside rice and vegetables
  • In sandwiches or wraps

  • Cheesy center: Add a cube of cheese inside each muffin
  • BBQ style: Use BBQ sauce instead of ketchup
