Minestrone Soup

Minestrone soup is a hearty Italian vegetable soup, often made with beans, pasta or rice, and a tomato-based broth. It’s healthy, filling, and perfect for any season.


🍲 Classic Minestrone Soup Recipe

Ingredients:

  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 2 cloves garlic (minced)
  • 1 can (400g) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 cup green beans or zucchini (chopped)
  • 1 cup pasta (small shapes like elbow or ditalini)
  • 1 can (400g) kidney beans or cannellini beans (drained)
  • Salt and pepper to taste
  • Optional: fresh parsley or basil for garnish
  • Optional: grated Parmesan

👩‍🍳 Instructions:

  1. Sauté vegetables:
    In a large pot, heat olive oil and sauté onion, carrot, celery, and garlic for 5–7 minutes until softened.
  2. Add liquids & tomatoes:
    Stir in diced tomatoes and broth. Bring to a simmer.
  3. Cook vegetables:
    Add green beans or zucchini, and cook for 10 minutes.
  4. Add pasta & beans:
    Stir in pasta and drained beans. Simmer until pasta is tender (8–10 minutes).
  5. Season & serve:
    Add salt, pepper, and garnish with fresh herbs or Parmesan. Serve hot.

🌟 Tips:

  • Use seasonal vegetables for best flavor
  • For a thicker soup, mash some beans before adding
  • You can make it ahead—the flavors improve after sitting for a few hours
