🥔 Loaded Baked Potato Soup

Ingredients:

  • 4 large potatoes, peeled and diced
  • 4 slices bacon, chopped
  • 1 small onion, chopped
  • 3 cups chicken or vegetable broth
  • 1 cup milk or cream
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • Salt & black pepper to taste
  • Optional toppings: sour cream, chopped green onions, extra bacon, shredded cheese

Instructions:

  1. Cook bacon
    In a large pot, cook chopped bacon until crisp. Remove with a slotted spoon, leaving some bacon fat in the pot.
  2. Sauté onion
    Add onion to the bacon fat and sauté until soft.
  3. Cook potatoes
    Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  4. Mash and blend
    Mash some of the potatoes in the pot for a thicker, creamier texture. You can also use an immersion blender for a smoother soup.
  5. Add dairy & cheese
    Stir in milk or cream and shredded cheddar cheese. Heat gently until cheese melts. Adjust salt and pepper.
  6. Serve
    Top with cooked bacon, green onions, extra cheese, and a dollop of sour cream.

  • For extra creaminess, use half-and-half or heavy cream.
  • Add garlic powder, smoked paprika, or chives for extra flavor.
  • For a lighter version, use low-fat milk and skip some bacon.
