🥦🍗 Broccoli Chicken Cheese Casserole

Ingredients:

  • 2 cups cooked chicken, shredded or cubed
  • 2 cups broccoli florets, steamed until slightly tender
  • 1 cup cooked rice or pasta (optional for a heartier casserole)
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • ½ cup milk
  • 1 small onion, chopped
  • Salt & pepper to taste
  • ½ cup breadcrumbs (optional, for a crunchy topping)

Instructions:

  1. Preheat oven
    180°C (350°F) and grease a baking dish.
  2. Mix the filling
    In a large bowl, combine chicken, broccoli, rice/pasta (if using), soup, sour cream, milk, onion, 1 cup cheese, salt, and pepper. Mix well.
  3. Assemble casserole
    Transfer the mixture to the prepared baking dish. Spread evenly.
  4. Add topping
    Sprinkle remaining cheese on top. Add breadcrumbs if you like a crunchy crust.
  5. Bake
    Bake uncovered for 25–30 minutes, until bubbly and the top is lightly golden.

✨ Tips:

  • Use rotisserie chicken for a quicker version.
  • Add cooked bacon or ham for extra flavor.
  • Swap cheddar for mozzarella or Monterey Jack for a creamier texture.
  • Can be prepared ahead of time; just add 5–10 minutes to baking time if chilled.
