Ingredients:

  • 2 cups cooked chicken (cubed or shredded)
  • 2 cups broccoli florets (steamed until slightly tender)
  • 1 cup cooked rice or pasta (optional, for extra bulk)
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • ½ cup milk
  • 1 small onion, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional, for crunchy topping)

Instructions:

  1. Preheat oven
    180°C (350°F). Grease a baking dish.
  2. Prepare the filling
    In a large bowl, mix cooked chicken, steamed broccoli, rice/pasta (if using), soup, sour cream, milk, 1 cup cheese, onion, garlic powder, salt, and pepper.
  3. Assemble casserole
    Transfer mixture to the prepared baking dish. Spread evenly.
  4. Add topping
    Sprinkle remaining cheese on top. Optionally, add breadcrumbs for a crunchy finish.
  5. Bake
    Bake uncovered for 25–30 minutes until bubbly and cheese is golden.

  • Use cooked rotisserie chicken to save time.
  • Mix in a little cooked bacon for extra flavor.
