Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, diced
  • 1 potato, diced
  • 1 cup green beans, cut into pieces
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Optional: 1 cup chopped kale or spinach

Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft.
  2. Add carrots, celery, zucchini, potato, and green beans. Cook 5–7 minutes.
  3. Stir in diced tomatoes, vegetable broth, thyme, and basil. Bring to a boil.
  4. Reduce heat and simmer 20–25 minutes, until vegetables are tender.
  5. Add kale or spinach in the last 5 minutes of cooking. Season with salt and pepper.
  6. Serve hot with bread or crackers.

This is a flexible recipe — you can add peas, corn, or whatever veggies you have.
