  • 8–10 eggs

    • Onion
    • Mushrooms
    • Zucchini

How to Make Them

  1. Prep oven
    Preheat to 375°F (190°C). Grease a muffin tin really well.
  2. Cook veggies (important!)
    Sauté veggies briefly to remove moisture. Let cool slightly.
  3. Mix eggs
    Whisk eggs, milk, salt, and pepper until smooth.
  4. Assemble
    Divide veggies and cheese evenly into muffin cups.
    Pour egg mixture over, filling about ¾ full.
  5. Bake
    Bake 18–22 minutes, until set and lightly golden.
  6. Cool
    Let them rest 5 minutes before removing.
