🍮 Homemade Vanilla Pudding

Ingredients (Serves 4)

  • 2 1/2 cups milk
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks, lightly beaten
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

Instructions

1️⃣ Mix dry ingredients

  • In a medium saucepan, whisk together sugar, cornstarch, and salt.

2️⃣ Add milk

  • Gradually whisk in milk until smooth.
  • Place over medium heat and cook, stirring constantly, until mixture begins to thicken and comes to a gentle boil (about 5–7 minutes).

3️⃣ Temper the egg yolks

  • Slowly whisk about 1/2 cup of hot milk mixture into the egg yolks to prevent curdling.
  • Then, pour the yolk mixture back into the saucepan, stirring constantly.

4️⃣ Finish cooking

  • Cook 2–3 more minutes, stirring constantly, until pudding is thick and creamy.
  • Remove from heat and stir in butter and vanilla extract until smooth.

5️⃣ Chill or serve

  • Pour pudding into individual bowls or a serving dish.
  • For best results, chill for at least 1 hour.
  • Serve with a spoon, whipped cream, or fresh fruit if desired.
