Soft, flavorful, and totally hands-off (not crispy like oven-roasted, but perfect comfort-style).


Slow Cooker Potatoes

Serves: 4–6

Ingredients

  • 2–3 lbs baby potatoes or Yukon Golds, halved or quartered
  • 3 tbsp olive oil or melted butter
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika or Italian seasoning
  • Optional: chopped parsley, shredded cheese, bacon bits

Instructions

  1. Prep
    • Spray slow cooker with nonstick spray.
    • Add potatoes and garlic.
  2. Season
    • Drizzle with oil or butter.
    • Add salt, pepper, and seasoning.
    • Toss to coat evenly.
  3. Cook
    • LOW: 6–7 hours
    • HIGH: 3–4 hours
    • Stir once halfway if possible.
  4. Finish
    • Taste and adjust seasoning.
    • Top with parsley, cheese, or bacon if you want.

🔥 Variations

  • 🧀 Cheesy: Add cheddar or parmesan in last 30 minutes
  • 🥓 Loaded: Bacon + sour cream + green onions
  • 🌿 Garlic herb: Rosemary + thyme + butter
  • 🌶 Spicy: Cajun seasoning or chili flakes

🧠 Good to know

  • These are tender, not crispy
  • If you want crisp edges: transfer to oven at 425°F for 10–15 minutes after slow cooking
