Taco casserole

Oh yes 😋 Let’s make a hearty, cheesy taco casserole—all the flavors of tacos in a cozy, oven-baked dish.


Taco Casserole

Ingredients (6 servings)

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, ½ tsp paprika, ½ tsp salt, pinch of cayenne)
  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 6–8 small flour tortillas, cut into strips or squares
  • Optional toppings: sour cream, salsa, chopped cilantro, sliced jalapeños

Instructions

1. Cook the meat

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef and onion over medium heat until browned, 5–7 minutes.
  3. Add garlic and cook 1 minute more.
  4. Stir in taco seasoning, diced tomatoes, black beans, and corn. Cook 2–3 minutes until combined.

2. Assemble the casserole

  1. Lightly grease a 9×13-inch baking dish.
  2. Layer half of the tortilla pieces in the bottom of the dish.
  3. Spread half of the meat mixture over the tortillas.
  4. Sprinkle 1 cup of cheese on top.
  5. Repeat layers with remaining tortillas, meat, and cheese.

3. Bake

  • Cover with foil and bake 20 minutes.
  • Remove foil and bake another 5–10 minutes, until cheese is melted and bubbly.

4. Serve

  • Let cool 5 minutes before serving.
  • Top with sour cream, salsa, cilantro, or jalapeños if desired.

Tips

  • Make-ahead: Assemble the casserole a day in advance and refrigerate; bake when ready.
  • Extra flavor: Add a layer of refried beans or a sprinkle of taco sauce between layers.
  • Vegetarian version: Omit meat and add extra beans, diced peppers, and zucchini.
  • Crunchy topping: Crush tortilla chips over the top for a crispy finish.
