Taco Casserole

Ingredients (serves 4–6)

Meat & Beans

  • 1 lb ground beef (or turkey/chicken)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, ½ tsp paprika, ½ tsp garlic powder, salt & pepper)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (10 oz) diced tomatoes with green chiles, drained

Casserole Base

  • 2 cups cooked rice or corn tortillas, cut into strips/cubes
  • 1 cup corn (optional)

Cheese & Topping

  • 1½–2 cups shredded cheddar or Mexican blend
  • Optional toppings: sour cream, sliced jalapeños, chopped green onions, avocado, cilantro

Instructions

1. Cook Meat

  1. Preheat oven 375°F (190°C).
  2. In a skillet, cook onion + garlic until soft.
  3. Add ground meat, cook until browned.
  4. Stir in taco seasoning, beans, and tomatoes. Simmer 5 min.

2. Assemble

  1. Grease a 9×13 baking dish.
  2. Layer rice (or tortilla strips) on the bottom.
  3. Pour meat mixture over rice.
  4. Sprinkle cheese on top.

3. Bake

  • Bake 20–25 min until cheese is melted and bubbly.
  • Optional: broil 2–3 min for golden cheese.

4. Serve

  • Slice like lasagna, top with sour cream, avocado, cilantro, or extra jalapeños.

Pro Tips

  • Make ahead: Assemble, cover, refrigerate, bake before serving.
  • Extra crunch: Top with crushed tortilla chips before baking.
  • Veggie boost: Add bell peppers, zucchini, or mushrooms to the meat mixture.
  • Cheesy heaven: Layer cheese inside as well as on top.
