Instructions:

  1. Prep the squash:
    • Preheat oven to 400°F (200°C).
    • Slice squash in half lengthwise and scoop out seeds.
    • Brush with olive oil, season with salt and pepper, and place cut-side down on a baking sheet.
    • Roast 25–30 minutes, until just tender.
  2. Prepare the filling:
    • While squash roasts, heat olive oil in a skillet.
    • Sauté onion and garlic 2–3 minutes until fragrant.
    • Add chopped vegetables and cooked sausage (if using); cook until vegetables are softened.
    • Stir in cooked grains, herbs, and half of the cheese. Taste and adjust seasoning.
  3. Stuff and bake:
    • Flip the roasted squash cut-side up and spoon the filling into each half.
