Strawberry tart

🍓 Strawberry Tart (Fresh & Elegant)

A classic dessert with a crisp crust, creamy filling, and glossy fresh strawberries on top.


🛒 Ingredients

Crust (sweet tart shell):

  • 1¼ cups all-purpose flour
  • ½ cup cold butter, cubed
  • ¼ cup powdered sugar
  • 1 egg yolk
  • 1–2 tbsp cold water

Filling (pastry cream or shortcut option):

  • 1½ cups milk
  • 3 egg yolks
  • ⅓ cup sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla

(Shortcut: use vanilla pudding mix or sweetened cream cheese + whipped cream.)

Topping:

  • 1–2 lbs fresh strawberries, hulled
  • ¼ cup apricot jam (for glaze)

🔥 Instructions

1️⃣ Make the crust

  • Mix flour and sugar. Cut in butter until crumbly.
  • Add egg yolk and just enough water to form dough.
  • Press into tart pan. Chill 30 minutes.
  • Bake at 375°F (190°C) for 18–22 minutes until golden. Cool completely.

2️⃣ Make pastry cream

  • Heat milk until steaming.
  • Whisk yolks, sugar, and cornstarch.
  • Slowly pour warm milk into egg mixture while whisking.
  • Return to heat and cook until thick.
  • Stir in vanilla. Cool fully before using.

3️⃣ Assemble

  • Spread cooled pastry cream into tart shell.
  • Arrange strawberries tightly on top.
  • Warm apricot jam and brush over strawberries for shine.

Chill at least 1 hour before serving.

  • Add a layer of melted chocolate under the cream
  • Use mascarpone instead of pastry cream
  • Mix blueberries with strawberries for color contrast
