🍓 Strawberry Icebox Cake

Ingredients (Serves 6–8)

  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 (8 oz / 225g) package cream cheese, softened (optional for extra creaminess)
  • 2–3 cups fresh strawberries, sliced
  • 1 box graham crackers (or chocolate wafers for variation)

Instructions

1️⃣ Prepare the Whipped Cream

  • In a large bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  • Optional: Fold in softened cream cheese for a richer texture.

2️⃣ Layer the Cake

  • In a 9×13-inch dish, place a single layer of graham crackers.
  • Spread a layer of whipped cream over the crackers.
  • Add a layer of sliced strawberries.
  • Repeat layers until you use all ingredients, finishing with whipped cream on top.

3️⃣ Chill

  • Cover with plastic wrap and refrigerate at least 4 hours or overnight.
  • This allows the graham crackers to soften and absorb the cream, creating a “cake” texture.

4️⃣ Serve

  • Garnish with extra strawberries, chocolate shavings, or crushed graham crackers.
  • Slice and serve chilled.
