For the steak:

  • 1–1.5 lbs (450–680g) steak (ribeye, sirloin, or strip)
  • Salt & pepper to taste
  • 1–2 tsp olive oil
  • 1 tbsp butter (optional)
  • 2 cloves garlic, smashed (optional)
  • Fresh herbs (thyme or rosemary, optional)

For the potatoes:

  • 1 lb (450g) baby potatoes or Yukon gold, quartered
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Optional: fresh rosemary or thyme

1️⃣ Prepare Potatoes

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with olive oil, garlic powder, paprika, salt, pepper, and herbs.
  3. Spread on a baking sheet in a single layer.
  4. Roast 25–30 minutes, turning halfway, until golden and crispy.

2️⃣ Cook Steak

  1. Let steak come to room temperature. Pat dry and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear steak 3–5 minutes per side for medium-rare (adjust for thickness).
  4. Optional: During last 1–2 minutes, add butter, garlic, and herbs. Spoon melted butter over steak.
  5. Let steak rest 5 minutes before slicing.

3️⃣ Serve

  • Slice steak against the grain and serve alongside roasted potatoes.
  • Optional: drizzle steak with pan juices or a simple garlic butter.

  • Steak doneness: Use a meat thermometer — 130°F for medium-rare, 140°F for medium.
  • Crispier potatoes: Cut evenly and don’t overcrowd the pan.
