Sri Lankan rice and curry

Here’s a traditional Sri Lankan Rice and Curry meal recipe—a colorful, aromatic, and hearty dish featuring rice served with multiple curries:


Ingredients (Serves 4)

For the Rice:

  • 2 cups white or red rice (Sri Lankan red rice preferred)
  • 4 cups water
  • ½ tsp salt

For the Main Curry (Chicken or Beef):

  • 1 lb chicken thighs or beef, cut into bite-sized pieces
  • 2 tbsp oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 green chilies, slit
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp coriander powder
  • 1 tsp curry powder
  • 1 cup coconut milk
  • Salt to taste
  • 1 sprig curry leaves (optional)

For a Vegetable Curry (e.g., Eggplant or Beans):

  • 1 cup chopped vegetables (eggplant, beans, or pumpkin)
  • 1 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp turmeric powder
  • 1 tsp chili powder
  • ½ cup coconut milk
  • Salt to taste

Optional Side Dishes:

  • Dhal (lentil curry)
  • Pol Sambol (coconut relish)
  • Seeni Sambol (caramelized onion relish)

Instructions

1. Cook the Rice

  1. Rinse the rice until water runs clear.
  2. Boil water with salt, add rice, reduce heat, cover, and simmer 15–20 minutes until cooked.
  3. Fluff with a fork.

2. Make the Main Curry

  1. Heat oil in a pan, sauté onion, garlic, ginger, green chilies, and curry leaves until fragrant.
  2. Add chicken or beef, turmeric, chili, coriander, and curry powder. Sauté until meat is lightly browned.
  3. Pour in coconut milk, reduce heat, and simmer 20–30 minutes until meat is tender and sauce thickens.
  4. Adjust salt and spice to taste.

3. Make the Vegetable Curry

  1. Heat oil, add mustard seeds, and let them pop.
  2. Add vegetables, turmeric, chili powder, and sauté 2–3 minutes.
  3. Add coconut milk, cover, and cook until vegetables are tender (10–15 minutes).

4. Serve

  • Place a mound of rice on the plate.
  • Arrange the meat curry, vegetable curry, dhal, and sambols around the rice.
  • Serve warm for a complete Sri Lankan meal.

Tips:

  • Sri Lankan meals are often spicy and aromatic, so adjust chili levels to your taste.
  • Coconut milk adds creaminess and balances heat in curries.
  • Traditional Sri Lankan rice & curry often includes 5–6 different curries on the plate for variety.
