A cozy, flavorful soup with tender shrimp, noodles, and a spicy, savory broth — perfect for warming up any day.


🛒 Ingredients (Serves 2–3)

  • 8 oz ramen noodles (fresh or dried, discard seasoning if using instant)
  • 1 lb shrimp, peeled and deveined
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 tbsp soy sauce
  • 1–2 tbsp Sriracha or chili paste (adjust to taste)
  • 1 tsp sesame oil
  • 1 cup mushrooms, sliced
  • 1 cup bok choy or spinach
  • 2 green onions, chopped
  • Optional: soft-boiled egg, lime wedges, cilantro, sesame seeds

🔥 Instructions

1️⃣ Prepare broth

  • In a large pot, heat sesame oil over medium heat.
  • Sauté garlic and ginger 30 seconds until fragrant.
  • Add chicken or vegetable broth, soy sauce, and Sriracha. Bring to a simmer.

2️⃣ Cook noodles

  • Cook ramen noodles separately according to package instructions, then drain.

3️⃣ Cook shrimp and veggies

  • Add shrimp and mushrooms to simmering broth.
  • Cook 3–4 minutes until shrimp turn pink.
  • Add bok choy or spinach and simmer 1–2 more minutes.

4️⃣ Assemble soup

  • Divide noodles into bowls.
  • Pour spicy shrimp broth and veggies over noodles.
  • Top with green onions, soft-boiled egg, lime wedge, sesame seeds, or cilantro if desired.

🌿 Tips & Variations

  • Adjust spice level with more or less Sriracha, chili paste, or fresh chilies.
  • Add other vegetables like bell peppers, carrots, or corn.
  • For richer broth, add ½ cup coconut milk or a splash of miso paste.
