A flavorful and lightly charred fish dish, perfect for summer grills or a healthy dinner. The spice rub gives the trout a bold kick while keeping it tender and moist.


🧾 Ingredients

  • 2 whole trout, cleaned and gutted (about 1 lb each)
  • 2–3 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (adjust for heat)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 lemon, sliced
  • Optional: fresh herbs like parsley, thyme, or dill

1. Preheat Grill

  • Preheat grill to medium-high heat (about 400°F / 200°C).
  • Oil the grates to prevent sticking.

2. Prepare the Trout

  1. Pat trout dry with paper towels.
  2. Rub olive oil all over the fish, inside and out.
  3. Combine paprika, cayenne, garlic powder, onion powder, salt, and pepper.
  4. Rub spice mixture inside and outside the trout.
  5. Stuff the cavity with lemon slices and optional fresh herbs.

3. Grill the Trout

  1. Place trout directly on the grill or on a grill basket.
  2. Grill 4–6 minutes per side, depending on thickness, until the fish flakes easily with a fork.

4. Serve

  • Serve hot with lemon wedges.
  • Pair with:
    • Grilled vegetables
    • Rice or quinoa
    • Green salad
