Instructions

  1. Cook the Grits:
    • Bring water/milk to a boil, add salt.
    • Stir in grits and reduce heat to low.
    • Cook 20–25 minutes, stirring occasionally until thick and creamy.
    • Stir in butter and optional cheese at the end.
  2. Prepare the Waffles & Chicken:
    • Toast or reheat waffles in a toaster or oven.
    • Warm or pan-fry the chicken until crispy and heated through.
    • Drizzle with maple syrup or honey when serving.
  3. Cook the Eggs:
    • Fry eggs sunny-side up, over-easy, or scrambled—your preference.
    • Season with salt and pepper.
  4. Sauté the Greens:
    • Heat oil or bacon grease in a skillet.
    • Add garlic, then greens, sauté until wilted (~5 minutes).
    • Season with salt, pepper, and a splash of vinegar if desired.
  5. Assemble the Plate:
    • Serve chicken and waffles with syrup on one side.
    • Add a scoop of creamy grits.
    • Place eggs on the plate with greens on the side.
    • Optional: top with hot sauce or sliced sausage for extra flavor.
