Here’s a simple and hearty recipe for a Smoked Sausage and Potato Bake—perfect for an easy dinner or meal prep.


Ingredients (serves 4–6)

  • 1 lb smoked sausage, sliced into 1/2-inch pieces (Andouille or Kielbasa work great)
  • 1.5 lbs potatoes, diced (Yukon Gold or red potatoes)
  • 1 large onion, chopped
  • 2 bell peppers, chopped (any color)
  • 2–3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or Italian seasoning
  • Salt and pepper to taste
  • Optional: shredded cheddar cheese for topping
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven:
    • Preheat to 400°F (200°C).
  2. Prep vegetables and sausage:
    • Dice potatoes, chop onion and bell peppers, slice sausage.
    • In a large bowl, toss potatoes, onion, peppers, garlic, olive oil, paprika, thyme, salt, and pepper.
  3. Assemble bake:
    • Spread the potato and veggie mixture in a 9×13-inch baking dish.
    • Scatter sausage slices on top.
  4. Bake:
    • Cover with foil and bake for 25–30 minutes.
    • Remove foil, stir gently, and bake another 15–20 minutes until potatoes are tender and edges are slightly crispy.
  5. Optional finishing touches:
    • Sprinkle shredded cheddar cheese on top and bake another 5 minutes until melted.
    • Garnish with fresh parsley before serving.

💡 Tips:

  • For faster cooking, parboil potatoes for 5–7 minutes before baking.
  • You can swap potatoes for sweet potatoes for a slightly sweeter flavor.
  • Leftovers taste amazing reheated for breakfast with eggs.
