🥘 Smoked Sausage and Potato Bake

A hearty, one-pan meal with smoky sausage, tender potatoes, and savory seasonings — perfect for an easy weeknight dinner.


🛒 Ingredients (Serves 4–6)

  • 1 lb (450 g) smoked sausage (like kielbasa or andouille), sliced into ½-inch rounds
  • 4–5 medium potatoes, diced (Yukon Gold or red potatoes work well)
  • 1 bell pepper, diced (optional)
  • 1 small onion, chopped
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • Optional: shredded cheddar cheese or fresh parsley for topping

🔥 Instructions

1️⃣ Preheat oven

  • Preheat oven to 400°F (200°C).

2️⃣ Prepare ingredients

  • Toss diced potatoes, sausage, onion, and bell pepper in olive oil, garlic powder, smoked paprika, salt, and pepper.

3️⃣ Bake

  • Spread mixture in a single layer on a greased baking sheet or in a casserole dish.
  • Bake 35–40 minutes, stirring halfway, until potatoes are tender and sausage is browned.

4️⃣ Optional toppings

  • Sprinkle shredded cheese during the last 5 minutes of baking.
  • Garnish with chopped parsley before serving.

5️⃣ Serve

  • Serve hot as a complete meal or alongside a simple salad.

🌿 Tips & Variations

  • Add other vegetables like zucchini, carrots, or mushrooms for variety.
  • For extra crispiness, broil 2–3 minutes at the end.
  • Use spicy sausage or kielbasa for a kick.
  • Make it a slow cooker version by combining ingredients in the crock pot and cooking LOW 4–5 hours.
