Smathered hamburger steak

Posted on March 25, 2026 by Admin

Here’s a classic Smothered Hamburger Steak recipe—juicy ground beef patties cooked in a rich, savory onion gravy. Perfect comfort food!

Ingredients (Serves 4)

For the Patties:

  • 1 lb (450 g) ground beef
  • ½ cup breadcrumbs
  • 1 egg
  • ¼ cup milk
  • 1 small onion, finely chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder (optional)

For the Gravy:

  • 2 tbsp butter or oil
  • 1 large onion, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Make the patties:
    • In a bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, salt, pepper, and garlic powder.
    • Form into 4–6 oval or round patties.
  2. Brown the patties:
    • Heat a skillet over medium-high heat with a little oil.
    • Brown patties 3–4 minutes per side. They don’t need to be fully cooked yet. Remove and set aside.
  3. Make the onion gravy:
    • In the same skillet, melt butter and sauté sliced onions until soft and caramelized (~5–7 minutes).
    • Sprinkle flour over onions and stir for 1–2 minutes to make a roux.
    • Gradually whisk in beef broth and Worcestershire sauce. Simmer until thickened (~3–5 minutes). Season with salt and pepper.
  4. Smother the steaks:
    • Return patties to the skillet, spoon gravy over them, cover, and simmer on low for 10–15 minutes until patties are fully cooked.
  5. Serve:
    • Serve hot over mashed potatoes, rice, or egg noodles, spooning extra gravy on top.

✅ Tip: For a richer flavor, add a splash of cream or a little red wine to the gravy. You can also sauté mushrooms with the onions for a mushroom smothered variation.

I can also provide a slow cooker version that lets the patties cook gently all day for even more tender, juicy results.
