This Slow Cooker Tomato Tortellini Soup is a cozy, hearty meal with tender tortellini in a rich tomato broth—perfect for busy days.


Ingredients

  • 1 package (9–12 oz) cheese tortellini (fresh or frozen)
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups chicken broth or vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small onion, diced
  • 2–3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Optional: 1 cup spinach or kale

Instructions

  1. Combine ingredients in slow cooker
    Add diced tomatoes, tomato sauce, chicken broth, carrots, celery, onion, garlic, basil, oregano, salt, and pepper.
  2. Cook the soup
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until vegetables are tender.
  3. Add tortellini
    About 20–30 minutes before serving, stir in the tortellini (fresh or frozen). If using spinach or kale, add it at this time.
  4. Finish and serve
    Cook until tortellini is tender. Adjust seasoning with salt and pepper. Serve hot with crusty bread.

Serving Ideas 🍽️

  • Serve with garlic bread or a fresh green salad 🥗
  • Add a drizzle of olive oil for extra richness
