  • 2–3 lbs pork shoulder or pork loin, cut into chunks

Instructions

  1. Prepare the pork:
    Season pork chunks with salt and pepper. Optional: sear in a skillet for 2–3 minutes per side for extra flavor.
  2. Mix sauce:
    In a bowl, combine pineapple juice, brown sugar, soy sauce, ketchup, garlic, and ginger.
  3. Layer in slow cooker:
    Place pork and chopped onion in the slow cooker. Pour sauce over the top and add pineapple chunks.
  4. Cook:
    Cover and cook on low for 6–8 hours or high for 3–4 hours, until pork is tender and shreds easily.
  5. Thicken sauce (optional):
