  • Green onions and sesame seeds for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Prep the pork
    • Trim excess fat from the pork shoulder and cut into large chunks.
    • Optional: Sear the pork in a hot skillet for 2–3 minutes per side to deepen flavor.
  2. Mix the sauce
    • In a bowl, combine pineapple juice (reserve chunks separately), soy sauce, brown sugar, rice vinegar, garlic, ginger, black pepper, and red pepper flakes if using.
  3. Assemble in the slow cooker
    • Place pork chunks in the slow cooker.
    • Pour the sauce over the pork.
    • Add chopped onion and pineapple chunks.
    • Stir gently to combine.
  4. Cook
    • Low: 6–8 hours
    • High: 3–4 hours
    • Pork should be very tender and easy to shred with a fork.
  5. Optional thickening
    • Remove pork and keep warm.
    • Mix cornstarch with water to make a slurry and stir into the slow cooker sauce.
    • Cook on high for 10–15 minutes until thickened.
  6. Serve
    • Shred or slice the pork, return it to the sauce, and stir to coat.
