Ohhh this one is a classic 🫑🥩—Slow Cooker Pepper Steak is tender, savory, and perfect over rice. Set it and forget it comfort food.


🥩 Slow Cooker Pepper Steak

Ingredients (4–6 servings)

  • 1½–2 lbs flank steak or sirloin, thinly sliced against the grain
  • 2 bell peppers (green, red, or mixed), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup soy sauce (low-sodium preferred)
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp ground ginger (or fresh if you have it)
  • ½ tsp black pepper

Thickener (add later):

  • 2 tbsp cornstarch
  • 2 tbsp cold water

Instructions

  1. Layer ingredients
    • Place steak, peppers, onion, and garlic into the slow cooker.
  2. Mix sauce
    • In a bowl, whisk beef broth, soy sauce, Worcestershire, brown sugar, ginger, and black pepper.
  3. Cook
    • Pour sauce over steak mixture.
    • Cover and cook LOW 6–7 hours or HIGH 3–4 hours, until beef is tender.
  4. Thicken sauce
    • About 30 minutes before serving, mix cornstarch and water.
    • Stir into slow cooker, cover, and cook until sauce thickens.
  5. Serve
    • Serve hot over steamed white rice, brown rice, or noodles.

🔥 Tips & Variations

  • Extra flavor: Add 1 tbsp oyster sauce or hoisin sauce.
  • Veggie boost: Toss in mushrooms or snow peas near the end.
  • Spicy: Add red pepper flakes or sliced chili peppers.
  • Less salty: Replace half the soy sauce with broth.

This is one of those church-supper / family-favorite meals that disappears fast.
