- 2 lbs (900 g) boneless, skinless chicken breasts or thighs, cut into chunks
- 1 large head cauliflower, cut into florets (or 4 cups frozen cauliflower)

- 3 cloves garlic, minced
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- 1 cup sour cream or Greek yogurt
- ½ cup chicken broth
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & black pepper, to taste

🔥 Instructions
1️⃣ Prep slow cooker
- Spray the inside of your slow cooker with non-stick cooking spray.
2️⃣ Combine ingredients
- In a large bowl, mix chicken, cauliflower, onion, garlic, cream cheese, sour cream, chicken broth, paprika, garlic powder, onion powder, salt, and pepper.
- Pour mixture into slow cooker.
3️⃣ Cook
- LOW: 4–6 hours
- HIGH: 2–3 hours
- Chicken should be fully cooked (165°F / 74°C) and cauliflower tender.
4️⃣ Add cheese
- Stir in shredded cheddar about 15–20 minutes before serving to melt into the casserole.
