Meatloaf
- 2 lbs ground beef (80/20 works best)
- 1 packet French onion soup mix
- 1 cup breadcrumbs or crushed crackers
- 2 eggs
- ½ cup milk
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- ½ tsp black pepper
Onion Gravy
- 2 cups sliced onions
- 2 tbsp butter
- 1 cup beef broth
Instructions
- Caramelize onions (optional but worth it):
In a skillet, melt butter over medium heat. Add onions and cook 10–15 minutes until soft and golden.
(You can skip this and use raw onions for a stronger flavor.) - Mix meatloaf:
In a large bowl, combine ground beef, soup mix, breadcrumbs, eggs, milk, Worcestershire, garlic powder, and pepper.
Mix gently—don’t overwork it. - Shape & set:
Shape meat mixture into a loaf.
Place onions in the bottom of the slow cooker and set the meatloaf on top. - Add broth:
Pour beef broth around (not over) the meatloaf. - Cook:
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until internal temp reaches 160°F (71°C). - Serve:
Slice and spoon onion gravy over the top.
Tips for Best Results
- For a firmer loaf, line the slow cooker with foil and lift it out to rest 10 minutes before slicing.
- Want it richer? Stir 1–2 tbsp cornstarch mixed with water into the gravy and cook 15 minutes longer.
- This is amazing with mashed potatoes or buttered egg noodles.
