Here’s a simple and sweet recipe for Slow Cooker Cinnamon Sugar Glazed Carrots—a perfect side dish for any meal.
Ingredients (Serves 4–6)
- 1 lb (450 g) carrots, peeled and cut into sticks or rounds
- 2 tbsp unsalted butter
- ¼ cup brown sugar
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ tsp vanilla extract (optional)
- 2–3 tbsp water (to prevent sticking)
Instructions
- Prepare the carrots:
- Peel and cut carrots into uniform sticks or rounds for even cooking.
- Combine in slow cooker:
- Place carrots in the slow cooker.
- Add butter, brown sugar, cinnamon, salt, and water. Toss to coat evenly.
- Optional: stir in vanilla extract for extra flavor.
- Cook:
- Cover and cook on low for 3–4 hours or high for 1.5–2 hours, until carrots are tender but not mushy.
- Glaze the carrots:
- About 15–20 minutes before serving, stir carrots to coat in the melted sugar-butter mixture.
- If desired, turn the slow cooker to high for the last few minutes to thicken the glaze slightly.
- Serve:
- Transfer carrots to a serving dish and drizzle with any remaining glaze.
- Optional garnish: a sprinkle of fresh parsley or a pinch of extra cinnamon.
✅ Tip: For extra depth of flavor, add a pinch of nutmeg or a splash of orange juice before cooking. These carrots also pair wonderfully with roasted meats or a holiday meal.
I can also provide a 30-minute stovetop version if you want the same sweet glaze but faster than using a slow cooker.
