Creamy Slow Cooker Chicken & Bacon
Ingredients
- 4 chicken breasts (or 6 chicken thighs)
- 6β8 slices bacon
- 1 cup chicken broth
- 1 cup heavy cream (or cooking cream)
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 tsp paprika
- 1 tsp dried thyme (optional)
- Salt and black pepper to taste
- 1 tbsp cornstarch (optional, for thickening)
- Fresh parsley (optional, for garnish)
Instructions
- Cook the bacon first
Fry bacon in a pan until crispy. Remove and chop into pieces. Keep about 1 tablespoon of the bacon fat. - Sear the chicken (optional but recommended)
In the same pan with the bacon fat, quickly brown the chicken for 2β3 minutes per side. - Add to slow cooker
Place chicken in the slow cooker. Add bacon pieces, onion, garlic, paprika, thyme, salt, and pepper. - Pour liquids
Add chicken broth and cream. - Cook
- Low: 6β7 hours
- High: 3β4 hours
- Thicken the sauce (optional)
Mix cornstarch with 2 tbsp water and stir into the slow cooker during the last 20 minutes. - Serve
