Easy Slow Cooker Chicken

Ingredients (Serves 4–6)

  • 2–3 lbs chicken (breasts or thighs)
  • 1 cup chicken broth (or water)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp dried thyme or Italian seasoning
  • 1 tbsp olive oil or butter (optional)

Instructions

  1. Add to slow cooker
    • Place chicken in the crockpot.
    • Pour broth over chicken.
    • Sprinkle all seasonings evenly on top.
    • Add olive oil or butter if using.
  2. Cook
    • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and cooked through.
  3. Serve or shred
    • Serve whole with vegetables, or
    • Shred with two forks for tacos, sandwiches, soups, or casseroles.

Flavor Variations

  • BBQ chicken: add 1 cup BBQ sauce, skip broth.
  • Mexican-style: add taco seasoning + salsa.
  • Garlic herb: add lemon slices and fresh herbs.
  • Creamy chicken: stir in cream cheese or sour cream at the end.

Tips

  • Thighs stay juicier than breasts for long cooking.
  • Don’t overcook on HIGH—chicken can dry out.
  • Save the cooking liquid for soup or gravy.
