🥘🧀 Slow Cooker Cheesy Sausage Potato Casserole

This casserole is hearty, creamy, and perfect for an easy, comforting meal. Sausage, potatoes, and cheese cook together slowly, creating a rich, flavorful dish.

🧾 Ingredients

  • 1 lb (450 g) sausage (Italian, smoked, or breakfast sausage), sliced or crumbled
  • 4–5 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • ½ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • Optional: green onions or parsley for garnish

👩‍🍳 Instructions

1. Prepare Ingredients

  1. Dice potatoes, chop onion, and mince garlic.
  2. Slice or crumble sausage.

2. Layer in Slow Cooker

  1. Grease the slow cooker with cooking spray or a little oil.
  2. Layer potatoes, onion, garlic, and sausage in the slow cooker.
  3. In a bowl, mix sour cream, milk, cheddar cheese, salt, pepper, and paprika.
  4. Pour the mixture over the layered ingredients.

3. Cook

  • Cover and cook on:
    • Low: 6–7 hours
    • High: 3–4 hours
  • Potatoes should be tender and cheese melted.

4. Add Cheese Topping

  • Sprinkle extra shredded cheddar over the top about 15 minutes before serving, cover, and let melt.

5. Serve

  • Garnish with chopped green onions or parsley.
  • Serve as a main dish or hearty side.

⭐ Pro Tips:

  • Use small diced potatoes for faster cooking.
  • You can substitute cream of mushroom or cream of chicken soup for a creamier texture.
  • Add bell peppers or broccoli for extra veggies.

I can also provide a restaurant-style version with a thicker cheese sauce and crispy topping that’s perfect for weeknight dinners or potlucks.

Do you want me to make that version?
