🥬 Slow Cooker Cabbage and Sausage

Ingredients (Serves 4–6)

  • 1 medium head green cabbage, chopped into wedges or roughly chopped
  • 1 lb (450 g) smoked sausage or kielbasa, sliced into 1-inch pieces
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2–3 medium potatoes, diced (optional, for a heartier dish)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt & pepper, to taste

Instructions

1️⃣ Layer ingredients

  • In the slow cooker, layer potatoes and carrots first (if using), then onion and garlic, sausage, and finally cabbage.
  • Pour diced tomatoes and broth over the top.
  • Sprinkle paprika, thyme, salt, and pepper.

2️⃣ Cook

  • Cover and cook on low for 6–7 hours or high for 3–4 hours.
  • Stir gently halfway through cooking to mix flavors.

3️⃣ Serve

  • Taste and adjust seasoning before serving.
  • Serve hot, with crusty bread or over rice if desired.

Tips

  • For extra flavor, brown the sausage in a skillet before adding to the slow cooker.
  • Add a splash of apple cider vinegar at the end for a tangy kick.
  • You can substitute smoked sausage with kielbasa, bratwurst, or even chicken sausage.
  • For a spicier version, add a pinch of crushed red pepper flakes.
