Here’s a hearty slow cooker beef stew that’s rich, tender, and perfect for a comforting meal. 🥘


🥩 Slow Cooker Beef Stew

Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 3–4 potatoes, peeled and chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 tbsp flour or cornstarch (for thickening)
  • 1 cup frozen peas (optional)

Instructions

  1. Prepare the slow cooker: Add beef, potatoes, carrots, celery, onion, and garlic.
  2. Make the broth: In a bowl, mix beef broth, tomato paste, Worcestershire sauce, salt, pepper, paprika, and thyme.
  3. Pour over ingredients in the slow cooker and stir lightly.
  4. Cook:
    • Low: 7–8 hours
    • High: 4–5 hours
  5. Thicken the stew: Mix flour or cornstarch with a little water and stir into the stew during the last 20–30 minutes.
  6. Add peas during the last 15 minutes if using.
  7. Serve hot with crusty bread or biscuits.

💡 Tips

  • Browning the beef in a pan first adds deeper flavor (optional).
  • Add mushrooms for extra richness.
  • The stew tastes even better the next day as the flavors develop.
