🍳 Shirred Eggs (Baked Eggs)
Shirred eggs are eggs gently baked in individual dishes (ramekins) with cream and butter until the whites are just set and the yolks stay silky. Simple, elegant, and perfect for brunch.
Serves 2 (1–2 eggs per person)
Ingredients
- 4 large eggs
- 2–4 tbsp heavy cream
- 1–2 tbsp butter (softened)
- Salt & freshly cracked black pepper
- Optional: grated Parmesan, fresh herbs (chives, thyme), cooked bacon or spinach
Instructions
1️⃣ Preheat
Oven to 375°F (190°C).
2️⃣ Prepare dishes
Generously butter 2 ramekins. Add 1–2 tablespoons cream to each.
3️⃣ Add eggs
Crack 2 eggs into each ramekin. Keep yolks intact.
Season with salt and pepper. Add a small dot of butter on top.
4️⃣ Bake gently
Place ramekins in a small baking dish. Pour hot water around them (about halfway up sides) to create a water bath.
Bake 12–15 minutes, until whites are set but yolks are still soft.
5️⃣ Finish & serve
Sprinkle herbs or cheese on top. Serve immediately with toast soldiers or crusty bread.
