Sheet pan meatloaf

Here’s a simple, tasty sheet pan meatloaf recipe that’s easy to make and perfect for weeknight dinners:


Ingredients (4–6 servings)

Meatloaf:

  • 1 ½ lb ground beef (or a mix of beef & pork for extra flavor)
  • 1 cup breadcrumbs (panko works great)
  • 1/2 cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme or Italian seasoning

Topping:

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp Dijon mustard (optional)

Vegetables (optional, for roasting on the same pan):

  • 2 cups baby potatoes, halved
  • 2 cups carrots, cut into sticks
  • 1 tbsp olive oil
  • Salt and pepper

Instructions

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper or lightly grease it.
  2. Prepare Meatloaf Mixture:
    In a large bowl, combine ground meat, breadcrumbs, milk, onion, garlic, egg, Worcestershire sauce, salt, pepper, and seasoning. Mix gently—don’t overwork, or it can get dense.
  3. Shape Meatloaf:
    On the sheet pan, shape the mixture into a loaf (about 8×4 inches). Optional: leave space around it if adding vegetables.
  4. Add Topping:
    In a small bowl, mix ketchup, brown sugar, and Dijon mustard. Spread evenly over the top of the meatloaf.
  5. Add Vegetables (Optional):
    Toss potatoes and carrots with olive oil, salt, and pepper, and arrange around the meatloaf.
  6. Bake:
    Bake for 25–30 minutes. Then reduce heat to 375°F (190°C) and bake another 20–25 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Rest and Serve:
    Let the meatloaf rest for 5–10 minutes before slicing. Serve with roasted vegetables on the side.

  • For extra flavor, add a handful of chopped fresh parsley or basil to the meatloaf mixture.
  • Leftovers taste great in sandwiches the next day.
  • You can swap ketchup topping for BBQ sauce for a smoky twist.
