Here’s a fresh and flavorful Seafood Salad recipe—light, zesty, and versatile:


🥗 Seafood Salad

🔹 Ingredients (serves 4)

  • 1 lb cooked seafood (shrimp, crab, scallops, or a mix)
  • 2–3 cups mixed salad greens (lettuce, arugula, spinach)
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • 1 avocado, diced (optional)
  • 2 tbsp fresh parsley or dill, chopped

For the dressing:

  • 3 tbsp olive oil
  • 1 ½ tbsp lemon juice (or lime)
  • 1 tsp Dijon mustard
  • 1 tsp honey (optional)
  • Salt & pepper to taste

🔹 Instructions

1. Prepare seafood

  • If seafood is raw, poach shrimp/scallops in lightly salted water until pink/opaque
  • Chill before adding to salad

2. Make dressing

  • Whisk together olive oil, lemon juice, mustard, honey, salt, and pepper

3. Assemble salad

  • In a large bowl, combine greens, tomatoes, cucumber, onion, and avocado
  • Add seafood on top
  • Drizzle dressing and toss gently

4. Serve

  • Garnish with fresh herbs
  • Optional: serve with lemon wedges or crusty bread

🔹 Tips

  • Use pre-cooked seafood for a super quick version
  • Add crunch with toasted almonds, pine nuts, or croutons
  • For creamier dressing, mix 2 tbsp mayonnaise into the vinaigrette
