Scampi shrimp

Ah yes—Scampi Shrimp—garlicky, buttery, slightly tangy, and ready in under 15 minutes 😋🦐

Here’s a classic version:


🦐 Garlic Butter Shrimp Scampi

Ingredients (for 2–3 servings)

  • ½ lb (225 g) large shrimp, peeled and deveined
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)
  • ½ cup dry white wine or chicken broth
  • Juice of ½ lemon
  • 2 tbsp fresh parsley, chopped
  • Salt & pepper, to taste
  • Cooked pasta, rice, or crusty bread for serving

Instructions

  1. Prep shrimp
    • Pat dry and season lightly with salt and pepper.
  2. Cook shrimp
    • Heat butter + olive oil in a skillet over medium-high heat.
    • Add shrimp, cook 1–2 minutes per side until pink and opaque. Remove and set aside.
  3. Make the sauce
    • In the same pan, sauté garlic (and red pepper flakes if using) 30–60 seconds.
    • Add wine or broth and lemon juice. Simmer 2–3 minutes until slightly reduced.
  4. Combine
    • Return shrimp to pan and toss to coat in sauce.
    • Stir in fresh parsley.
  5. Serve
    • Over cooked pasta, rice, or with crusty bread to soak up the sauce.

🔥 Tips & Variations

  • Creamy version: add 2 tbsp cream at the end.
  • Spicy: add extra red pepper flakes or a dash of hot sauce.
  • Herb twist: swap parsley for basil or dill.
  • Shortcut: frozen shrimp work fine—just thaw first.
