Sausage sauerkraut and potatoes

Ingredients:

  • 1 lb (450 g) sausage (kielbasa, bratwurst, or smoked sausage)
  • 2 cups sauerkraut, drained
  • 4 medium potatoes, peeled and diced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp oil or butter
  • 1/2 cup chicken broth (optional, for extra moisture)
  • Salt, pepper, paprika (optional)

Instructions:

  1. Brown the sausage: Slice the sausage into 1–2 inch pieces. In a large skillet or Dutch oven, heat oil and brown the sausage over medium heat. Remove and set aside.
  2. Sauté aromatics: In the same pan, sauté onions and garlic until soft.
  3. Add potatoes and sauerkraut: Stir in diced potatoes and sauerkraut. If you like, add a splash of chicken broth to keep things moist.
  4. Combine and cook: Return sausage to the pan. Cover and simmer on low heat 20–30 minutes, stirring occasionally, until potatoes are tender and flavors meld.
